The star of the menu is the shirosoba (white noodles), a local take on ramen that features several local ingredients: chicken raised in Fujinomiya, a broth made with fish stock from Numazu, and medium-fine straight noodles specially made at Fujinomiya's long-established noodle mill.

    The grilled gyoza dumplings, stuffed with juicy chicken meat, are also rightly famous. For lunch, there’s a special set menu of shirosoba and gyoza that ticks all the boxes. In the evening, side dishes that go perfectly with drinks are served to give the restaurant an extra level of charm.

    The house-brewed beer is based on the styles you’d find in Portland, Oregon, the home of craft beer, but uses spring water from Mt. Fuji.
