I have to mention first, Dinner at the island guesthouse was amazing! We stayed for 8 days and couldn't have had a nicer stay. marshall (Michelin cook/host) and Libby were so nice and accommodating when it came to breakfast and anything else. The honor bar system was so clutch during late nights when most places are closed; they have a great bar selection, and the pina colada mix was a-1. Hopefully my review makes sense because there are so many good things to point out about staying here. Marshall and Libby were great hosts with great conversation and a welcoming relaxed vibe; they gave us insight to the inner workings on the island as potential property owners. But by far the best things I've experienced on this trip was dinner prepared by Marshall at their in-house steak restaurant (Tues-Sat only). Dinner was great but the standout of the entire night was most definitely the "Smoked Tomato Caesar Salad" w/little gems, pecorino, breadcrumbs, fish sauce. This dressing needs to be bottled and sold immediately; amazing! give me 14 of them right now lol! The smokey tomato flavor, the slight saltiness of the fish sauce, it was perfect. Tomato in Caesar was a super genius creation. Not to forget, the Swordfish Katsu Bites w/sriracha, scallions, and housemade furikake, like what!!!?! The crunch, the flavor, the texture, the everything! No salt, pepper or any kind of condiments needed when they are cooking. And their was Ube Cheesecake! I ran out characters but so much more to say
